No Bake, No Fuss Millionaire Shortbread | Recipe

There's nothing I like more than being busy in the kitchen on a Sunday morning and that's what I've been doing today. Here is my recipe for No Bake, No Fuss Millionaires Shortbread. This is a really easy and quick recipe to whip up when you have guests coming over or a handy quick one to make with the kids, trust me they will have fun licking the chocolate off of the spoon.






Ingredients

Base:

300g shortbread biscuits
100g melted unsalted butter

Caramel:

397g condensed milk
150g unsalted butter
150g light brown sugar

Chocolate Topping:

200g plain chocolate
50g milk chocolate
50g unsalted butter



Prepare your tin (I used one 11in x 7in) by lining it with greaseproof paper, baking paper or thick foil.
Crush your shortbread biscuits, I popped them in a resealable bag and bashed them with my trusty rolling pin but you can also just use a food processor.
Melt the butter and add in the crumb mixture a bit at a time. Mix it all together then dollop in into you tin. Use the back of a spoon to flatten out the base. Pop it in the fridge while you get on with the caramel.

Add the butter and sugar into a large pan and put that on a medium heat until it's completely melted. Add the condensed milk (the food of the Gods) and put it on the highest heat bringing it to the boil. Here comes the dangerous bit for me, while on the heat stir the caramel mixture quickly, be careful as I have done this before and ended up almost needing a skin graft on my hand (surprisingly enough I'm not being a drama queen, I have a nice caramel shaped scar on my hand). Once you've stirred the mixture for 2-3 minutes set aside for a few then pour it over the biscuit base and pop it back in the fridge and get ready for the chocolate topping.

Melt the two types of chocolate together either in a microwave or on the hob then stir in the butter. Pour the chocolatey topping over the caramel and pop it in the fridge once more for about an hour so it sets.


After the agonising hour, take it out and slice it up into either squares or bars and there we have it, no bake, no fuss millionaire Shortbread. Perfect to share or just for you, huddled up on the sofa on a Sunday afternoon which is exactly what I'm doing right now.
